ZUCCHINI SLICE
6 zucchinis*, grated
1 large onion, diced
1 & a half cups of cheddar cheese, grated
1 cup self raising flour
1/4 cup oil
3 eggs plus 2 extra egg whites
1 carrot, grated
1 & a half cups bacon, diced
Pepper & salt
Beat all eggs in a large bowl until combined
Add flour & beat until smooth
Add grated zucchini*, onion, carrot & 1 cup of the cheese
Add 1 cup of the diced bacon, oil & add salt & pepper
Stir all ingredients well together to combine thoroughly
Pour into a lightly greased & paper lined Lamington tin
Sprinkle remaining bacon & cheese over the top
Bake in Hot oven (200 C) for 20 minutes then reduce oven temperature to Moderate (180 C) & cook for a further 15 minutes
Remove from oven & let cool in tin for 30 minutes on wire rack
Remove from tin & allow to completely cool before cutting in pieces
Can be frozen
*place grated zucchini into a clean tea towel & wring out excess moisture before adding to other ingredients
